We produce this sparkling wine only from the best vintages after the traditional (classic) method and are maturing it at least for four years on yeast, which takes place under ideal conditions at the Ottokar cellar in the charter house Žicˇe. The basic wine is Pinot Blanc from a distinctive site in Škalce. The speciality of this sparking wine is that after the separation of sediments and wine (disgorging) we do not add any liquor (non-dosage). When scenting there is a mixture of fruits, bread crust and spices. At tasting it feels elegant, settled and with elegant acids it leaves a pleasant luscious impression.
